Salmon, Salad & Quinoa Rice - Left over ingredient edition

No recipe, left over salads, remaining protein in freezer, so what you see is what you get :)

How to...

It starts with a Salmon steak pan fried as I didn't want to wait for the oven. Skin on is my preference love the crunch. The salad and simple chop of the mushrooms, cucumber, lettuce and tomato. Add the dressing, mustard and sweet chilli sauce then mix together (photo without mix, looks nicer). This meal was made with the microwave quinoa brown rice mix (half serve shared with my wife) and that is all.

My Take...

Definitely not my finest mix but I like it. By my calculations it comes in at around 450cals with 35g of protein and 17grams of fat (all from the salmon and a bit in the dressing). For those that like Salmon, it is an easy work at home option. As for the salad you can do what you want. The whole thing took 15 minutes to prepare and you can mix and match the whole lot to your preference.

Tips/Options

- Change the rice for another carb source

- For the real foodies that dressing would be oil, sesame oil, apple cider blah blah. But yes I am sure that tastes wicked, but not happening on my lunch break right now.
